Apricot Bumper Bars
Time to ditch the super expensive sugary muesli bars from supermarket shelves. These bars are the easiest snack in the world - add everything to a blender and there is no baking required. You end up with a delicious oaty bar filled with apricot and chocolate chunks.

Ingredients –
1 1/2 cups rolled oats (GF option: buckwheat groats)
1/2 cup dried coconut
1/2 cup sunflower seeds
1 cup dried apricots, soaked in boiling water for 5 minutes then drained
4 tbsp coconut oil, melted
1 tbsp tahini
1/2 tsp sea salt
2 tbsp water
1/4 cup dried apricots, diced
80g dark chocolate, chopped
Method –
Place oats, coconut, and sunflower seeds in a blender and blend into a fine flour. Add the soaked apricots, coconut oil, tahini, sea salt and water. Blend until a cookie dough consistency is formed. Add another 1-2 tbsp of water if the mixture seems too dry.
Place the dough into a bowl and mix in the diced apricots and chopped chocolate until well combined.
Press the dough into a lined tin. Use the back of a spoon to create a nice smooth top. Place in the freezer to set for at least 2 hours.
Once set, cut into bars and store in an airtight container in the freezer for up to 2 months.
