Elevate your summer salads with this stunning Grilled Peaches, Tomatoes, Basil + Burrata salad! This simple yet elegant recipe from Two Raw Sisters combines sweet, juicy peaches, fresh tomatoes, fragrant basil, and creamy burrata for a taste sensation. Perfect for a light lunch or a summer dinner party.


Serves: 2 as a main, or 4 as a side

Time: 25 minutes


Ingredients –

2 peaches, destoned and cut into slices 

1 tbsp cooking oil 

½ tsp sea salt 

180g cherry tomatoes 

2 cup rocket 

1 cup basil 

125g burrata 

¼ cup walnuts, roasted and chopped 

2 tbsp extra virgin olive oil

Method –

Preheat the oven to 200C.

On a baking tray, add the peaches, drizzle over the cooking oil and sprinkle over the sea salt. Gently toss and place in the oven to cook for 10 minutes. 

Pull the baking tray out of the oven and add the cherry tomatoes. Place the baking tray back in the oven and cook for another 5-10 minutes. 

To assemble, get a round flat plate. We like to create 2 layers of the salad, starting with a layer of half of the rocket. Then arrange on top of the rocket half of the roasted peaches and cherry tomatoes, burrata, basil and walnuts. Lastly, drizzle over the extra virgin olive oil. Continue this layering process one more time. 

This salad is best served and enjoyed soon after assembling.
