Watermelon, Feta + Lime Pickled Onions

Super simple yet jam packed with flavour. Heaven on a plate. Cheers to summer and warm weather everyone!


Serves: 6

Time: 15 minutes


Ingredients –

Lime Pickled Red Onion 

1 red onion, very thinly sliced 

1 lime, zest and juice 

2 tsp apple cider vinegar 

½ tsp sea salt 

½ watermelon, cut into cubes 

1 cucumber, cut into cubes 

200g feta, cut into cubes 

1 cup mint, chopped 

1 cup basil, chopped 

2 tbsp extra virgin olive oil 

1 tsp sea salt

Method –

For the lime pickled red onion, add the red onion, lime zest and juice, apple cider vinegar and sea salt to a bowl. Toss to combine and set aside to allow the onion to pickle in the vinegar and sea salt, for at least 10 minutes.

In a large bowl, add all of the remaining ingredients. Once the pickled red onion are ready, add them into the bowl. 

Gently toss everything together. 

This salad is best served and enjoyed soon after assembling.
