This fresh little salad is full of punchy flavours and textures. This will be your go-to summer side dish, or light main served with grilled salmon, chicken or tofu.

Chilli Cucumber Salad
Chilli Cucumber Salad

Serves: 4

Time: 10 minutes


Ingredients –

1 cucumber, roughly cut into chunks  
1 bunch of coriander, roughly chopped
1 avocado, cut into chunks 
1 tsp flakey sea salt 

1 tbsp chilli oil 
1 tbsp sesame oil 
1 tbsp rice wine vinegar 
1 1/2 tbsp tamari 
2 cloves garlic, roughly chopped 
1 tbsp sesame seeds

Method –

Add the cucumber, coriander, avocado + sea salt into a bowl. Set aside. 

In a small bowl, add the chilli oil, sesame oil, rice wine vinegar, tamari and garlic. Stir everything together. 

Pour over ~3-4 tbsp of the oil over the cucumber and gently toss everything together. Serve any leftover oil on the side. 

This is best eaten soon after making.
