Make on a Sunday and store in an airtight container in the fridge for the week. Each morning all you have to do is add the oats to a bowl and top with your favourite toppings. We love yoghurt, seasonal fruit, hemp seeds and a dollop of peanut butter.

Lunch –
Mushrooms, Caramelised Onions, Avo and Rice Salad

Make the salad on a Sunday. We would recommend leaving out the coriander, rocket and avocado and adding them fresh each day. Alternatively you could substitute the coriander and rocket for 4-6 stalks of kale (stalks discarded and kale finely sliced) as it is a hardy green so will last in the salad over 3-4 days.
Each day for lunch enjoy with any extra goodies on top. We love serving smoked salmon or chicken on the side as well as a drizzle of hulled tahini.
