Peanut Sesame Rice
We make this most weeks and it is quite possibly the best rice ever. Peanut butter, tamari and sesame oil are a dream team. You can use this to bulk up a salad or mix it through roast veges. our favourite way to serve it is with roasted red cabbage, avocado, greens, salmon and a drizzle of tahini.


PEANUT SESAME RICE | SERVES 4 | 25 MINUTES
INGREDIENTS
1 cup brown rice
2 1/2 cups water
1 tablespoon peanut butter
1 tablespoon tamari
1 teaspoon sesame oil
METHOD
Place the brown rice and water in a medium pot. Bring to the boil, then reduce to a simmer and cook for 25 minutes. Remove from the heat and allow to sit for 5–10 minutes.
Once the rice has cooled down slightly, add the peanut butter, tamari and sesame oil and mix until everything is well combined.
Leftovers will keep in an airtight container in the fridge for up to 3 days.
